New York native Josh Green cooks at Republic Kitchen and Bar in Las Vegas – his pastry chef is fitness model Mary Jarmolowich. He produces meals and nutrition plans for fighters visiting Sin City and often travels with fight camps.
Recipe: Salmon with asparagus and brown rice
“Eating is so important for fighters because you need to have at least five meals throughout the day,” says Josh. “Range your protein and carb intake throughout. It’s so interesting to see what people are eating and how different a fighter’s diet is. If everybody ate like mixed martial artists did it’d be a healthier world.”
Ingredients:
- 8oz piece of salmon
- 2oz asparagus
- 1oz carrots (sliced)
- 1.5 cups brown rice
- 1tbs shallots
What to do:
1: First take a small pot. Boil some water and start the brown rice: remember it’s a 2:1 ratio of water to rice. Put the flame on simmer, cover the pot with aluminium foil and let it sit for about 45 minutes.
2: Then take the salmon and dust it with salt and pepper. Grab the asparagus and cut the ends off. Peel a carrot then hold it at a 45 degree angle and slice with a knife into strips about a 1/4 of an inch wide (if you don’t want to get so technical just cut it in circular rings).
3: Now put two saute pans on the stove. Let one get really hot for the salmon; add some olive oil to coat the pan. In the other put a dash of olive oil too and let it heat up a little bit.
4: Take the dusted salmon and put it in the hot pan face down for about two minutes. Then flip it over and place in the oven for about ten minutes on 350 degrees Fahrenheit (that’s 176 degrees Celsius or gas mark 4): this’ll cook you a medium salmon.
5: Now saute the carrots and asparagus in the other pan. Add some salt and pepper and saute it further for about five minutes.

Salmon is an oily fish and as it’s farm raised it also contains extremely good nutrients.”
BROWN RICE
“Brown rice is a great source of good carbohydrates. We’ll be looking at other good sources of carbohydrate where the excess doesn’t get absorbed as sugar.”
