Another fight camp special introduced by Fred the Chef - Fred Aarnes - who has cooked for MMA stars and some of the biggest names in the music industry.
What if we said you could have a meal that ticks all the nutritional spectrum, is simple to prepare and, well, tastes as good as World MMA Awards 2019 Ringcard Girl of the Year Carly Baker looks?
Here it is: the chicken and cashew wok and rumble.This is a delicious stir fry that gives you a powerful punch of protein (chicken and cashews) mixed with a smooth three-strike combo of fiber and vitamins (mushrooms, zucchini, tomatoes) all powered by a lip-smacking herb blend.
To top it off, we throw you those same nutritional building blocks baked without the oil for the purest hit of flavor and goodness, as well as a natural sweet boost, that also happens to be packed with immune system supercharger vitamin C (strawberries).
And all without starchy carbs. If you’re struggling to chop things like potato and pasta out of your diet, this dish is perfect. If you want to switch certain ingredients and still keep out the carbs, look at things like peppers, green beans, asparagus and broccoli.
And what’s more, with the chicken and cashew wok and rumble there’s no delicate slicing or off-the-wall ingredients; just simple-to-prepare, simple-to-source, great-for-you food. Tremendous for all you hungry, time-strapped, no-nonsense ring warriors.
RECIPE: CHICKEN AND CASHEW WOK AND RUMBLE
You'll need:
1 zucchini
4 small chicken breast fillets
10 closed cup mushrooms
1 large handful of cashew nuts
15 italian tomatoes
14 strawberries
poultry rub
thyme
salt and black pepper to season
What to do:
1: Cut the zucchini into four lengthways and then square. Place just under half onto skewers.
2: Halve a few of the mushrooms and skewer, and skewer the strawberries.
3: Take two of your chicken fillets and cut into halves lengthways. Massage with the poultry rub herb mix, black pepper and salt, now skewer.
4: Set the strawberries aside and place the chicken and veggie skewers into the oven at 395F for 10 minutes.
5: While your skewers are baking, chop the remaining mushrooms and stir fry with the rest of the zucchini and tomatoes on a high heat in a few dashes of olive oil. When cooked, remove from the pan or wok and allow to rest.
6: Chop the last two chicken fillets and stir fry with a sprinkling of poultry rub, salt and black pepper for three to four minutes on both sides.
7: Add in the cashews and vegetable mix until heated through.
8: Plate up the stir fry with fresh thyme for garnish and layer the baked skewers, and skewered strawberries over the top.
CHICKEN
Always a fighter’s favorite fowl. Packed with protein, the chicken prepared in this meal will fill you with around 33g of protein per 100g. Great for repairing and rebuilding after a long slog in the gym.
CASHEW NUTS
Another well-performing source of protein, cashews are low in saturated fat, high in fiber and boast about 15g of protein per 100g.
